Portwein Raritäten | Um sich Portwein zu nennen, müssen die Trauben ausschließlich aus den drei Anbaugebieten im nordportugiesischen Douro-Tal stammen (Baixo Corgo, Cima Corgo und Douro Superior). Über 40 Rebsorten sind für die Herstellung von Portwein zugelassen, die wichtigsten sind Tinta Roriz, Touriga Nacional, Tinta Roriz.
Nach der Handlese der Trauben werden diese gepresst und der Most wird zur Gärung angesetzt. Die Gärung wird durch Zugabe von ca. 80%igem Weindestillat gestoppt, der Zeitpunkt des Stoppens bestimmt dabei den verbleibenden Restzucker, die Süße des Portweins. Jeder Portwein reift zunächst für mindestens 2 Jahre im Fass.
Portwein hat einen Alkoholgehalt zwischen 19 und 22 % Vol.. dadurch ist er lange lagerfähig. |
