Manzanilla and Fino are the two very light and bright Sherrys with apple to salt aromas. Amontillado is also light, but with more mature aromas and already darker (light amber) as it slightly oxydized.
Palo Cortado is between Amontillado and Oloroso in colour and taste.
Oloroso is very aromatic and intense, has more richness and body. Its colour is dark brown. Walnut aromas and dried fruit are the most intense aromas.
Cream is a sweet sherry.
Pedro Ximinez or PX is extremely sweet. A concentrate of nut and plum aromas and almost black in color.
