Due to the special microclimate, the grapes are attacked by the noble rot in some areas, which makes the skin of the berries porous and the water evaporates from the grapes. And therefore concentrates the sugar and the aromas. The pickers will rather harvest raisins than grapes. The highly concentrated musts give wines with a lot of natural residual sweetness and an enormous spectrum of aromas.
