There is no other region in the world where so much interesting wine growing happens as in southern France. Since the 1980's many winegrowers have concentrated on quality instead of quantity and invested a lot. Southern France is divided into different regions: Languedoc and Roussillon, Provence. The south is not only the largest region of France (with 40% of the total production), it is also the oldest (about 2500 years). The Mediterranean climate is perfect for the vines. The winters are mild, the summers are hot and dry. The rain that falls in winter and spring brings enough humidity for the rest of the year. There used to be 150 different grape varieties, which have gradually disappeared. Now, for red wine, mainly Carignan, Cinsault, Grenache, Syrah and the international grape varieties such as Cabernet Sauvignon and Merlot are cultivated. The white wines are mainly made from Picpoul, Bourboulenc, Chardonnay and Sauvignon blanc.
